Milk Production 
Dairying occurs throughout Scotland in areas where the land is of sufficient quality to sustain good pasture. The main milk fields are to be found in Dumfries and Galloway, Ayrshire, the Clyde Valley and North East Scotland. In 2010, 1.078.8 billion litres were produced, a 1.6% increase on 2009 production. This accounted for around 12% of agricultural output in Scotland, worth an estimated £270 million. Final figures for 2010 show that there are around 184,683 dairy cows in Scotland. There are 1,603 specialist dairy holdings in Scotland, employing over 4,600 people (including hired labour, casual labour and occupier/spouse at June 2010).
